Prickly Pear Tunas

Prickly pear cactus fruit is called 'tunas'. The fruit is edible and is used for a variety of cooking and baking uses in the Southwest. To date, my favorite prickly pear treat is prickly pear cupcakes. The tuna is chopped and included in the cake. It's frosted, then topped with a candied piece of fruit.
